Once upon a time, long ago, the English visited France. They enjoyed our hospitality so much that they could not get enough of their new experiences. Grateful by our kindness, they created the English Muffin, a yeast bread cooked on a griddle. However, something was amiss in the flavor profile. So in return, the French , being so, hum… how should we say, so French, decided to add a little je ne sais quoi to the recipe, A match made in Normandy, “clarified butter” mentioned a French baker should add the final touch. And so through the century, the tradition was born and carried out to this day in my own kitchen!
